Stuffed Baked Fish

Ingredients:
- 4 fish fillets
- 4 slices bacon, chopped
- 1 rib celery, chopped
- 2 cups bread crumbs
- 1 tablespoon fresh parsley, chopped
- 1 egg
- 1 tablespoon milk
- 1/2 cup cornmeal
- salt and pepper to taste
Instructions:
1. First of all, preheat the oven to 425.
2. In a skillet, add in the bacon and cook it until crisp then set aside.
3. Now pour off all the fat but make sure you leave about 2 tablespoons of fat because you will need them later.
4. Add in the celery and onion then cook them until tender.
5. Remove from heat and add in the bacon, bread crumbs, parsley, pepper and salt. Combine and mix well.
6. In a bowl, add in the egg and milk. Beat well.
7. In another bowl, add in the cornmeal and salt and pepper. Combine and mix well.
8. Dip 2 fish fillets into the egg mixture then into the cornmeal mixture.
9. In a greased baking sheet, arrange 2 fish fillets then place the stuffing on the fish.
10. Coat the rest of the fish fillets and lay them on top of the stuffing with the cornmeal side up.
11. Sprinkle the reserved bacon drippings over the 2 fish fillets.
12. Bake for 13 minutes or until crisp.
