Ingredients:
- 1 pound fish fillets
- 2 cups potatoes, peeled, sliced 1/4 inch
- 3/4 cup crushed oblong crackers
- 2 tablespoons dried parsley flakes
- 1 teaspoon paprika
- 1/2 cup butter
- 3/4 teaspoon salt
- 1/2 teaspoon garlic powder
Instructions:
1. First of all, preheat the oven to 350.
2. Next, in a baking dish, add in the butter and melt it in the oven for about 5 minutes.
3. Add in the potato slices and stir a bit so everything is well blended.
4. Cover with foil and bake it for 25 minutes.
5. In a mixing bowl, add in the paprika, dried parsley flakes, salt, garlic powder and crackers. Combine and mix well.
6. Now set the potatoes on one side so that you can dip the fish fillets into the butter in the baking dish.
7. Roll the fish fillets into the bowl and make sure both sides are coated.
8. Arrange the fish inside the baking dish together with the tender potato slices.
9. Pour in the remaining crumb mix over the fish fillets.
10. Bake uncover for 30 minutes until you can easily flake the fish fillets with a fork.
